I'm no expert but as I understand it the "voy a acostarme..." means a future action "going to go to bed. Where as "Queremos acostarnos" denotes wanting to perform the action. "Wanting to go to bed" Basically I believe that acostarse means "to go to bed"
"Queremos ir a la playa" needs the ir because that denotes the action. I don't think this necessarily works just for reflexive verbs but it comes down to the verb being an action performed and whether it's in the present, the future, etc. and not a noun. "We want the beach" "We want to go.."
