Your previous vs. final trick is perfect!!!! And if you use it on that sentence you can use both correct? But using one word vs. the other would give the sentence different meaning. Well, same thing in Spanish, it depends on what you mean to say, if you mean my previous trip, then in would be pasado, if you mean my last trip, it would be último. And in this particular case, both sentences would have the same meaning. But if you were to say something like: This is my last trip to Mexico, then no doubt you would have to use "último".
