The L' olio is a contraction for "lo olio." The article "lo" is used with masculine nouns beginning with a vowel, but because of the vowel it is contracted to l'. Thus, l' represents the contraction for "lo" when before a masculine noun beginning with a vowel (as well as in other circumstances) and represents the contraction for "la" when before a feminine noun beginning with a vowel.
