I realize this is in the future, but that's indicated in más tarde. Could I say: Más tarde, mi esposo va al hotel. Like: Después, voy al hotel. It just seems the, va a ir al is a lot to muddle through and poor syntax, which makes me wonder if people really talk like that. Any thoughts out there?

This doesn't directly answer your question, but it might prove useful anyway. The same issue applies to English. Form number 1: My husband is going to the hotel later. Form number 2: My husband is going to go to the hotel later. I hear both used interchangeably, and apparently, the same applies to Spanish.

There is an emphasis in the Fluenz course to use "Voy a" to express the future. You will see that up to level 5 they use this form. It's a bit disconcerting at the beginning but now that I've started using Spanish in real life I realize that it is much more used than the real future tense, at least in Mexico. You will get used to say "Voy al banco ahora" to say that you go to the bank right now, but "Voy a ir al banco más tarde" to say I will go to the bank later.

@Fabrice, although it seems redundant since the future is indicated in mas tardes, I guess any language will have it's unique particulars so I thank you for sharing your real world experience. I'm glad I'm a native English speaker learning Spanish instead of the other way around. With all the "exceptions" in English I imagine it would be a tougher language to learn as a 2nd. Thanks again.
