@Jamie Brooklyn in the example you provided, Quelque chose (something) is the equivalent pronoun used to refer to a thing. In this case, you would never use 'vous désirez boire quelqueS choseS'. This is because 'quelque chose' is an indefinite pronoun which always take the third person singular form of the verb.
