You understood the use and place of "nicht" well, your example phrases are all correct.
In the last one, you couldn't follow it up with "sondern im hotel bleiben", you'd have to add the subject again, so it's more complex.
One option could be:
Wir gehen morgen ins Schimmbad nicht ; doch wir bleiben stattdessen im Hotel"
