I like swimming and playing golf...

I wasn't having trouble with this before. Am I just overthinking this now?
Maybe I've become stuck translating word-for-word instead of 'this is how they say it in Spanish.'

You're right, here you can't use a literal translation from English, because you're mentioning two cases where the two languages work differently:
- In English you use gerunds after prepositions, in Spanish after prepositions, you need to use an infinitive verb
eg. Antes de pedir, Después de llegar, Para viajar, Sin querer...
- in English you often use gerunds after the verbs "like" or "love"..., in Spanish after "gustar" you can't use a gerund, you need an infinitive verb again
eg. Me gusta leer, ¿Te gusta caminar? ...
