After verbs like "Gustar", you always need the article, no matter if you're speaking about something specific or general.
More generally, you always use the definite articles "el/la/los/las" when speaking in general in Spanish, unlike in English, hence "no le gusta much el pescado" with an article.
In the second phrase there's no article in Spanish because we're not speaking about meat in general, but about a certain quantity of meat, "some" meat. More generally, when you can use "some" in English, usually there's no article in Spanish, hence "quiere comer carne" without any article.
