You would say "der" if the reference would be to the orange juice directly. Here, however, the "das" is referring to an unknown "thing". What juice is that? Is that ("thing") Orange juice? - If you take the example of wine and substitute you'd be correct: Which juice is that? Ralph is right, "das" can be used as a general pronoun, which is the case here since we don't know what we're talking about specifically,
While you'd rather use the proper definite articles for each gender "der, die, das" when you're referring to something specific, which was already mentioned before for example..
