This is always hard for me too. Estar is used for properties that are transient, can vary, and almost always with location. Thus, estar would be used with "Here are..." Ser is used with intrinsic properties, such as "She is beautiful" or "This dish is delcious." In this case, "These dishes are for you" I guess is considered a property of the dishes, that is they always have been, and always will be "for you." But I am less certain about the logic in this case. Sometimes either is correct, some one at Fluenz could wade in on this one.

Ser & Estar can be quite tricky, so be patient, since it's only by observation and by using them a lot that you're going to grasp their uses little by little..
Here the key is in the "Aquí", a place indication, that's why we use "estar" in the first sentence. If you take out "aquí" then you would need to use "ser" because to give something's identity it's always "ser", yet to give somehting's location it's always "estar".
Observe:
Aquí están sus cafés VS Esos son sus cafés
Here are your coffees VS These are your coffees
Esos platos son para usted VS Esos platos están allá para usted
These dishes are for you VS these dishes are there for you
