- La settimana scorsa sono andato al cinema.
- L'anno scorso mi sono sposato.
Ultimo is used when talking about the last one of a series of things:
- Sono stato l'ultimo a partire.
- L'ultimo capitolo si trova in pagina 250.
- L'ultima volta che ho visuto Luigi, avevà una macchina bianca

Looking as some of the examples in your reply,, I am pretty sure you can say:
The last week of September: L'ultima settimana di settembre
Likewise, I think these are both possible:
In the last (i.e. previous) chapter ... Nello scorso capitolo
In the last (i.e. final) chapter ... Nell' ultimo capitolo
Which is what made me think that scorso means "previous" and ultimo means "last", and they can be used for any kind of noun.

That's correct. When we introduce "ultimo" in level 3, session 21, Sophie mentions that "scorso" is used as "previous" and "ultimo" as "final". So many times both would be possible, it just depends on the meaning.
