This particular phrase, yes can be a little confusing. When read in English you can probably think of it as just the veal being delicious or the veal with vegetables being delicious. But regardless, since it’s either the veal (femenine) which is delicious or the veal with vegetables (in which case the main aspect of the dish is veal, also femenine) you would write deliciosa as in ternera deliciosa and not deliciosos, as in vegetales deliciosos.What can cause a little confusion is that you might say, Si prefiere, tenemos una ternera deliciosa con vegetales, and that wouldn’t be incorrect grammatically, it’s just that in Spanish it sounds as if the veal was delicious and the vegetables, not so much, so you would probably hear: "Si prefiere, tenemos una ternera con vegetales deliciosa."All throughout level 3, and the upcoming levels we get into much more subtle territory where unfortunately it is very difficult to make things black & white.

Looks like if you diagram the idea (put () around the phrase "una ternera con vegetales") then the whole phrase becomes feminine because it's a unity.
