I had no idea, and definitely don't know the history of it! The Oxford English Dictionary lists a letter from the some guy named Ralph Thoresby as the first appearance of "muffin" in the english language. The letter dates to 1703:
A Moofin, a wheat cake baked upon a bake-stone over the fire, as oat-cakes.
I think I like his spelling more: moofin :)
