Wow, that's a tough question. In general, you use articles much the same as you would in English. As usual there are exceptions and regional differences.
I would say...montar en bicicleta (ride on a bicycle) and Conducir un coche (drive a car). Why? That's how I've seen it written and heard it said. Not much help, I know!
Incorrect use of articles is common. You will have no problem being understood. Check out these links for some of the rules governing use of articles.
