One suggestion, not really literature, but you will easily be able to read the early pieces and there's a vocabulary in the back: "Easy Spanish Reader" by William T. Tardy.

There is a series of short books (about 40-45 pages each) by Blaine Ray which are available on Amazon. They start out quite simple, with a lot of repetition in the text to help you learn. The first book does not have a "dictionary" of words and phrases used in the book, but the later ones do have that feature. There are five level One books, three level Two, and two level Three. I am part way through Fluenz Level 3, and find the last of the level One books a bit challenging which is good. I believe they also audio versions of many of the books. The books are written for teens (high school).

Also, there's a good chance that your local public library has books en español, both children's books and books for adults. Some even have the little "board books" that they make for babies, which are good for learning easy vocabulary: por ejemplo, el libro "Opuestos" ("Opposites") tiene las palabras: grande y pequeño, bajo y alto, et cetera. Then you can move on to books like "¿Eres Mi Mamá?" and "Buenas Noches, Luna". Usted puede terminar esos muy rápido, and be able to judge your level. Voy a terminar Fluenz Level 2 esta semana; estoy de vacaciones, y cuándo voy a mi casa, voy a empezer a leer "Los Juegos del Hambre" ("The Hunger Games"). I don't know if it will be too hard, but I want to try!
