Vous avez or vous ^etes depends whether the verb past tense is conjugated with avoir or ^etre, and you need to learn which verbs are conjugated with which auxiliar verb. (most of them are with avoir, though). However, both would mean that the main verb is in past tense. Then you look for the main verb, in this case to be and to go and you translate the main verb in past tense: you were, you went, or others like you ate, etc. So you don't need to translate word by word, just regard avoir and ^etre as helpers in the formation of the past tense (that's why we called them in this case auxiliar verbs) and just translate the main verb.
