It is a straight translation: Plate of pasta is Piatto di pasta. If you said Piatto della pasta, that is saying Plate of the pasta which makes little sense in English, and to an Italian, even less. Most times, when describing a plate of or a glass of, etc., always follow it with the di and what it is as in di vino, di acqua (d' acqua), and yes, di pasta. Hope that helps you.
