Hi Melinda, you asked some good questions. I think you can safely do 1 hour a day of Fluenz, and not worry too much if you make mistakes or not, but just make sure to review the contents often if they're not clear and when you feel sure that you've learned what you reviewed through the lesson, then go forward. You'll have plenty of drills after you study your conversation, but in these you'll need the right answer to proceed. However, it can be a very useful practice, because you will know which kind of mistakes you're making and what's the right answer as well, so you'll be able to correct them.
The sessions will build up on previous material, but they're designed in a way that you'll go thoroughly through the contents of each session, and thus if you study consistently every day there'll be little room left for you to forget what you've learned. Likewise, going over the audio CD's and the Podcasts will be very useful as well.
I could also recommend listening to some Spanish radio, it will help your mind get used to it and will let you catch up words more easily, and even help you with pronunciation.
