The reason why "la mia amica" is not contracted into "mi'amica", is because only articles (i.e. Il, La, una, etc.) and some "article + preposition" (such as "in il" = "nel", "in la" = "nella"; "a il" = "al", "a la" = "alla", etc.) contract in Italian. "Mia" is a possesive adjective, therefore it must retain its full form, even when the following noun begins with a vowel. So "Mia, mio, tuo, tua, suo, sua, loro" will always retain their full form. Here you have some examples:
Mio orecchio -- My ear
Tuo organo -- Your organ (instrument)
Tua azienda -- Your company
Il suo orgoglio -- His pride
Il / Le loro orologio -- Their (masculine or feminine) watch
Mio orecchio -- My ear
