I would think you could locate restaurants that cater to people who are vegan or have diet restrictions. I know from where my family comes from and still resides in today, (10 miles from Bari in Southern Italy), they actually don't eat meat a lot..in fact most of their meals center around mostly vegetables, lentils, nuts, and fruits in addition to pasta, meat, dairy, and fish. I would assume that if you are in tourist areas like Rome/ Vatican City, Milan, Venice, etc, you can probably find foods according to your diets.
I believe the italian word for vegan is "vegano/ vegana" and "vegani/vegane".
In a restaurant I'm assuming you could ask something along the lines of :
"Mi scusi, siamo vegani. C' è un menu vegano per favore?" (Excuse me, we are vegans. Is there a vegan menu please?"
"Vorrei questo piatto senza carne per favore" (I would like this dish without meat please)
"Non posso mangiare carne o latteria" (I can't eat meat or dairy)
