Rose, the possessive 'mein' ends in -en in your example because it is modifying the plural noun 'Taschen' in the dative case. If it were the singular feminine noun 'Tasche', it would be 'in meiner roten Tasche'. 'Meiner' because it's dative/singular/feminine and 'roten' because of the dative case. As for an example of an adjective ending in -en for masc accusative noun: 'Ich möchte bitte einen kleinen Kaffee'. Disclaimer: I'm at almost the same point in German 3 so hopefully I'm explaining this correctly!
