It's been a while since I did Spanish, but I think the way Fluenz does this kind of thing is they will put the "I" in parenthesis if they mean for you to omit it in the answer. You are right about it being acceptable to drop it, I guess they just do it this way to make sure you don't always drop it or always include it.

I agree. I drop the yo when it's obvious the subject is "I" as in "voy a buscar mis llaves". (I'm going to look for my keys). But it doesnt sound wrong to add the "yo" there either.
With some tenses, like your example with "podria" or even imperfect in "podia" the conjugation is the same for I, you (formal), he, and she, so the "yo" does help clarify who is doing what.
