When a singular noun is used as the subject with a definite article (Der, die, das), the adjective ends in "e". If it is used with an indefinite article (Ein, eine, ein), then the endings would be "-er, -e, es" on the adjective.

das einface Projekt is right. however if you were saying " a hard project" it would be ein einfachES project .

The others are right that when you have the definite article with a noun in the nominative case (der, die, das) the adjective ending is always -e in the singular. However, when you have the indefinite article (ein, eine, ein) the adjective has to agree with the noun and change its ending accordingly. So it would be:
Das einfache Projekt
Ein einfaches Projekt
Watch out Saied: "einfach" means "easy"!
