I'm just guessing here, but I would think that you would say "les fruits" when there is more than one type of fruit present. So, I would say it could be "le jus de fruit" (the fruit juice) or le jus de fruits (if more than one type of fruit). I would think it should be "jus de pomme", but again I'm just guessing.

Interesting.. if you google "jus de pommes" and look at images, 90% of the packaging is spelt "pomme", and a few are showing "pommes".

It's funny how even this type of question has been studied by a lot of people. I found an article that says that if you're going to talk about something that still shows the ingredient in some way, then it's going to be plural. For example, "compote de pommes", "marmelade de pêches", but if you cannot see what it's made of, you use the singular "jus de pomme", "coulis de tomate". It is true that this is usually the spelling difference that I've seen in shops. As for "jus de fruits" it should be plural, because as you already mentioned, this is about more than one fruit.

I tried finding a grammar rule regarding this issue, but I was unsuccessful. I like the explanation you presented from the article you read, and I vaguely remember something about it being discussed in a Fluenz exercise, but I have not been working on French for a while and cannot be sure. Thanks for your insight.
