If you say "Nosotros vamos de vacaciones", you are making sure that you're telling the person "We are going on vacation". If you reply to a question: "Adonde van?" and you reply "Vamos de vacaciones a españa" it also means "(We) are going on vacation". If you want to tell someone "Let's go!" then the correct way would be to use the imperative "Vayamos", but it's rarely used and has been replaced with "Vamos" in the day to day language. You may see "vayamos" in literature.
You may also hear "Vámonos" or "Nos vamos", which is more like "Let's leave", "let's get out".
You cannot go wrong by just using "Vamos" in all situations where you want to mean "Let's go".
