You are right that in this case Nora doesn't give a specific explanation for "die Gänge". That is mainly because "Drei-Gänge-Menü" is a set expression that you need to learn as it is.
You already know the number "drei" - three - and she explained the meaning and use of "das Menü" - the set menu - so we were sure you would be able to get "Gänge". Outside of this expression "Gänge" is not really used a lot. But just in case you were interested: the singular is "der Gang" - the course. So in German we need to use the plural in the expression "the three course meal". As we said "Gang" or "Gänge" isn't really used a lot as there are different words to talk about "first course", "second course", etc. which you will see in session 3 of level 3.
