I've given up on trying to roll the double R or the starting R, but for a R that is inside a word (e.g. pintura), I was able to sound close to it by doing a "d" instead (la pintuda), and make it softer. After a few weeks it sounded more like a spanish "r".
As for the Yo, you will hear it pronounced as yo or djo, or jjo or llo, sho, zho, etc.. depending on where you are. As long as you don't pronounce it as Yaw then you'll be understood. For great pronunciation examples, I use forvo. Here is "yo": http://www.forvo.com/word/yo/#es
