I went back to listen for you and she is definitely saying "einen Stadtplan." Maybe I am just used to hearing German, but I hear the ending pretty clear. Maybe it will come with practice :) In German many times the emphasis is on the first word/syllable and the following can be "softer" and tricky to pick out.

For making umlauts outside of the program, you can use "Option-U" on a Mac. I've found that these shortcuts usually translate into the same except using "Control" on Windows. For the "sharp S", the shortcut is "Option-S".
