You would say "Welcher Saft ist das?" You would use "das" in this case because that is the general word for "that". Dies und das. This and that. So if you were asking a general question inquiring about what something is: you would use the word "das".
"Was ist das?" What is that? That is why they use "das" in the first sentence.
In the second sentence, you would still use "das". You are still talking about the "what" in the second sentence, not the orange juice.
Was ist DAS? DAS ist... Was ist DAS? Ist DAS .... See how you are still speaking of the "what"? Hopefully this helps.
