The Fluenz teaching has always been as you say: "Wir gehen in die Kneipe da drüben" would be in English "We are going (in)to the pub/bar over there". "diese Kneipe" would be "this/that bar". But an expert's opinion would be welcome.

Exactly, it has always been for THE. I'm hoping it's a mistake, but if it isn't, I suppose I need to go back and redo some sessions. :D Thanks for your help

I believe it has to do with the position in the sentence of ''da drüben''
To say ''We are going to THE bar over there'' it would be ''Wir gehen da drüben in die Kneipe''
And to say ''We are going to THAT bar over there'' it would be 'Wir gehen in die Kneipe da drüben''.
A tutorial had stated that, for whatever reason, it is redundant to "diese da" and it should be "die da" to mean "this/that there" so "die Kneipe da" is "this/that bar there"

The article can actually mean both in certain situations.
Wir gehen in die Kneipe da drüben: can be translated to: We are going to this/that bar over there. And it has everything to do with a listed location. " da drüben" signifies location. If you listed no location then you can use dieser/dieses/diese for this/that
For example: Wir gehen in diese Kneipe: We are going to this/that bar.
Wir gehen in die Kneipe: We are going to the bar.
Wir gehen in die Kneipe da drüben: We are going to this/that bar over there.
You can also use the articles (das,die,der) by itself to say "this one/that one" with location.
Wir gehen in die da: We are going to this/that one (fem.) there. Wir gehen in den da: We are going to this/that one (masc.) there.
See how with the location you can just use the article for this/that? It would also work with "hier" or other words that are similar.

@Mike Dieker Yes, I think that's what tripped me up a bit. the tutorials only showed diese da and so forth. So I wasn't certain if die/der da meant this/that there.

No problem, glad it helped. I would like to point out that the position of "da drüben" does not have an effect on "this/that". Only the fact that "da drüben" is included in the sentence. See examples for reference.
