Hi Sandra,
"bar" is not capitalised here because it's an adjective - it describes how you are paying. So it's:
Wir können bar bezahlen - We can pay in cash
But to say "the cash" we put it together with "the money" - "das Geld" and we get the noun "das Bargeld" (with capital letter).
