Think in the present: "su viaje es interestante" vs "su viaje está interestante". The first one is understood as the characteristic of the trip, the entire trip is interessant in essence, for example, because the person decided to prepare it in advance and the things he or she is going to see will be interesant. In this case the trip doesn't even have to be in process, whereas the other is a temporal notion where you imagine the person actually right now in the process of vacationing, and at this moment the trip is interessant.
When you then use the past, fue would mean that the essence of the trip was interessant, and you probably knew that it would be interesant, whereas estuve would refer to the result of the trip which may not have been expected to be interesant at the start of it.
