In the first phrase, Thursday is today, so you would not need the "le" before jeudi. In the second phrase, if you were referring to this coming Saturday, you could say "Notre avion part samedi...", but since it's further in the future and gives a specific date (23 mars), you will use the article beforehand. Does this help a bit?

Can "On" also mean "Us", "We" or "One"? For example, "Comment est-ce qu'on dit...?" would mean "How does one say...?" And, "Qu'est-ce qu'on pourrais faire ?" I believe would mean "What will we be able to do?", right?

Dan this is right. However, the conjugation is "pourrait" with a t.
