Aller is the unconjugated version of to go, use it after another conjugated verb. For instance "Je veux aller au restaurant". "Allez" is the vous or conjugated from of aller. As in "vous voulez". I know the lessons don't directly talk about conjugation but it is the different forms of a verb used for je/il/vous/nous/etc.
