Your observation is correct. There is a lot of variation in the pronunciation of "LL" across the Spanish speaking world. I think FLUENZ is trying to prepare us for reality. Generally, books suggest that "LL" is pronounced as a elongated "Y" (as in Yeah!). But, it varies a lot by region. One native speaker I met, pronounced it as an "L" + "Y" combination. It takes getting "used" to. I just try to understand, no matter how it is pronounced. It will bother you less as you proceed, because you have already identified the phenomenon. And, FLUENZ gives us a lot of practice with this issue.
