You're perfectly right, it should end in S, however the word "Kollege" is a bit special, it's part of a category of nouns that we grammatically call "weak masculines" and which behave a bit differently from others, they end in N except in the nominative case, which is why you have: das Projekt des Kollegen.
Der Name is another "weak masculine" for example. Many masculine words ending in E, but not all of them.
It's a tricky concept that we'd only study in more advanced levels, meanwhile, just keep in mind sometimes you'll see different endings for some masculine nouns, like Kollege or Name.
