You can turn the "challenge mode" off to continue without them or you can make them with the keyboard shortcuts here: https://gyazo.com/7f139744ab84c58a744...
The pop-out keyboard was a recent feature added to the Fluenz program that hasn't yet been added to the flashcards.

what I do is use the universal windows ALT codes. That way if I need to type something in French or Spanish I will have learned them via answering the questions in Fluenz with the ALT codes that computers use.
Basically you hold down the ATL key and type in the code for the character you need. If you need umlaut e, for example, while holding down the ALT key (I believe that you can use the command key on a mac for this as well) while typing the keys 0,2,3,5. You have to type them in pretty quickly so the computer knows for sure that you are after the special character.
example: typing ALT + 0235 = ë. ALT + 0241 = ñ, ALT + 0231 = ç.
It does make for a little more learning but if you are ever going to type in another language with other characters I would learn the ALT entries at the same time. If you are not going to ever type documents in another tongue outside of Fluenz, use their method as it is faster until you have the ALT codes memorized.
