Usually the last e is not pronounced like in difficile or gentille. What lesson and level are you on? The only time the final e is pronounced is when there's an accent mark like "je suis all;e" (sorry I can't make accent mark here). I don't think we say di-fi-ci-le, just di-fi-cil.

You hear those differences because there are many regional differences in the way people pronounce the final E..or sometimes one person can even pronounce them in different ways depending on the word that comes next, whatever way the person thinks sounds better..
In any case, the safest choice is to keep in mind that the final Es are usually silent, unless they have an accent on top.
