Probably because "mucho" isn't modifying "la sopa." It's referring to the amount of liking you have for something ... not the amount of soup.
Why doesn't "mucho" change to "mucha"
Ok, so my wife and I are on Spanish, Level 2, Session 3. We ran into the sentence "I like soup a lot." We translated it as "Me gusta mucha la sopa." We thought "mucha" would have to match the feminine noun "la sopa", but apparently, the correct translation is actually "Me gusta mucho la sopa." We went back and watched the tutorial, but nothing was said about why "mucho" doesn't change. Any help would be greatly appreciated. :)

Yes DennisG is right, and you would use mucha in that sentence: "hay mucha sopa en la mesa" there is a lot of soup on the table.

So if a female said "I like soup a lot", would it be "Me gusta mucha la sopa"?

no, like DennisG said, it's a reference to the liking (me gusta). Me gusta how much? mucho.

Just remember the gender of the speaker only affects the gender of adjectives describing them. The same goes for objects. Like Dennis refers to, you have to be able to identify what the adjective is modifying in order to appropriately gender adjectives.

Maybe a few examples can make this is a little more clear. Masculine Subject with Masc and Fem nouns: El hombre alto - The tall man - "alto" describes the man, so we use the masculine form. El hombre alto corre mucho - The tall man runs a lot. - "mucho" describes the amount or frequency of running, not the man. El hombre alto corre todos los dias. - The tall man runs everyday. - "Todos" and "los" go with "dias," a masculine noun. El hombre alto corre todas las noches. - The tall man runs every night. - "Todas" and "las" go with "noches," a feminine noun.
